Cheese Crackers
INGREDIENTS:
1 cup buckwheat flour or spelt flour
1/2 tsp salt
1 cup edam cheese, grated
4 tbsp butter, grated
1 tbsp cold water
Cheese Crackers - better than store bought crackers! Kids love them.
Pre-heat your oven to 175 degrees Celsius.
Add flour, salt, butter and cheese to a food processor and blend until well combined.
Drizzle in the cold water, slowly until the mixture comes together. You might not need all
the water. Press the dough into a ball. If it's still falling apart, add a little more water.
Flatten the dough and refrigerate for 12 minutes.
Roll dough out on a flat surface to 0.5-1 cm thick. Use a cookie cutter or a sharp knife and
cut into squares. Place on a baking tray, lined with parchment paper. With a toothpick poke holes in the crackers to keep them from puffing up too much.
Bake for 10 minutes or until golden brown.
