Chocolate Cherry Muffins
INGREDIENTS:
2 cups flour (gluten free works fine)
2 tsp baking powder
1/2 tsp salt
1/4 cup raw cacao powder
1/2 cup melted butter
1/3 cup monk fruit or sweetener of your choice
2 eggs
1/2 cup milk
1/2 cup chocolate chips (optional)
3/4 cup cherries (fresh, pitted and halved)
These Muffins are a hit when cherries are in season. Kids love them in their lunchboxes.
Pre-heat your oven to 180 degrees Celsius.
In a large mixing bowl, whisk together melted butter and your sweetener/sugar.
Add in the eggs and milk and whisk to combine.
In a separate bowl, sift together the flour, baking powder and salt.
Add the dry ingredients to the wet ingredients and stir until combined.
Gently stir in the cherries and chocolate chips (if using).
Spoon the batter into your mini muffin moulds, but don't overfill them.
Bake for about 18 minutes and let them cool down.
