Gluten free Banana Muffins

INGREDIENTS:

3/4 cup almond flour

3/4 cup gluten-free oat flour (simply blend oats in a food processor)

1 tsp baking powder

1 tsp mixed spices

1 egg

2.5 tbsp olive oil

1/2 cup mashed banana (about two small ones or one large)

1 tbsp honey or maple syrup

1/3 cup blueberries (frozen or fresh)

Pre-heat your oven to 180 degrees Celsius.

In a large mixing bowl, combine 3/4 cup of almond flour, 3/4 cup of gluten-free oat flour, 1 teaspoon of baking powder, and 1 teaspoon of mixed spices.

In a separate bowl, whisk together 1 egg, 2.5 tablespoons of olive oil, 1/2 cup of mashed banana, and 1 tablespoon of honey or maple syrup until well blended.

Gradually add the wet mixture to the dry ingredients, stirring until thoroughly combined.
